How much frost, and where
A haze on packaging is nothing. A sheet on the back wall, ice on the cabinet floor, or frost that returns immediately after clearing are three different amounts of the same message.

Look behind the panel
The evaporator is the evidence. A coil under ice tells you the defrost cycle has stopped clearing it, and how the ice is distributed narrows which part of the circuit gave up.

A defrost drain iced closed puts the meltwater where it should not be. It is cleared and then watched running before the appointment ends.

Frost is a message about the defrost circuit
A frost-free cabinet makes ice on its evaporator continuously and melts it off on a cycle. When the frost starts winning, one of three things has stopped: the heater that melts it, the sensor that decides when to run, or the control that drives them. All three produce identical symptoms and all three are measured rather than guessed. The fourth possibility is the drain — the cycle runs, the ice melts, and the water cannot leave.
The three columns on this make
The only standalone freezers this maker builds are panel-ready single-temperature columns at 18, 24 and 30 inches, meant to stand beside a refrigerator column behind matching cabinet fronts. That means the work is refrigeration work and the access is a column's: the cabinet comes forward through your millwork and goes back leveled. How much frost is normal?
Very little on a frost-free cabinet. A light haze on packaging is fine. A sheet on the back wall, ice on the floor of the cabinet, or frost that comes straight back after you clear it means the defrost circuit is not keeping up, which is a real repair and not usually an expensive one.
It was fine all winter and started in June.
That is the most South Florida sentence on this page and it is genuinely diagnostic. Every door opening in August brings in air carrying a great deal of water. A cabinet with a drain partly closed or a door sitting a fraction proud copes with that in February and stops coping in summer, without anything having actually broken. Both of those are cheap.
Can I just defrost it manually?
You can, and it will work for a while — which is exactly the trap. Manually clearing the ice removes the symptom and leaves the cause, so it comes back, usually sooner. It is worth doing if you need the cabinet working this week; it is not worth doing instead of the repair.
There is water under the cabinet.
On a freezer that is usually the defrost drain rather than a supply line: the meltwater from each cycle has to go somewhere, and when the drain ices closed it goes onto your floor instead. Small repair, and worth doing before it reaches the cabinetry.
