    Measure what it is actually doing

    A thermometer in the middle of an empty cavity, through a full preheat and a hold. What the display says is the thing being tested, not the evidence.

    Calibration first, because it is free

    These ovens have an adjustment built into the control. An oven consistently out by a fixed amount is corrected there. One that is out by different amounts at different temperatures is a sensor, and that is a cheap part.

    Elements and convection under load

    Bake, broil and the convection element behind the back wall, measured with current flowing rather than by continuity. On a V2 system there are two fans and two elements, so which half of the oven underperforms matters.

    Out and back properly

    A built-in oven comes forward out of its housing to reach any of this, and goes back leveled and secured. That is the half of the appointment that is not the repair, and it is why this row starts where it does.

Temperature is measured, not read

Almost every oven complaint on this make is about temperature, and almost every one of them starts with the same question: what is the cavity actually doing? A thermometer in the middle of an empty oven through a full preheat and hold separates a calibration problem from a sensor problem from an element problem in about twenty minutes, and those three are a free adjustment, a cheap part and a moderate part respectively.

What goes wrong

  • The oven sensor, first suspect whenever the temperature is wrong rather than absent.
  • Bake and broil elements, which fail visibly when they are gone and invisibly when they are going.
  • The convection fan and element, and on a two-fan system, which of the two.
  • The door latch, especially around a self-clean cycle.
  • The door seal and hinges, on doors heavy enough to matter.
  • The cooling fan and vent path, which is what keeps the cabinetry around a built-in oven from getting hot.

Twenty machines, three shapes

Single ovens, double ovens and the combination towers that put a microwave or a speed oven above a conventional cavity, at 27 and 30 inches. Two convection systems run through the line — MultiMode, and a vertical dual-fan arrangement with a fan and an element at two heights. On the second of those, "the convection is not working" has two halves, and telling us whether the top or the bottom of a full oven came out underdone genuinely narrows it.

My oven is 25 degrees out. Repair or setting?

Try the setting, because it is free. These ovens have a calibration adjustment in the control, and an oven consistently out by a fixed amount is what it is for. If it is out by different amounts at different temperatures, or overshoots and then sits low, that is the sensor — one of the cheaper parts on the appliance.

The door locked during a self-clean and will not open.

Give it time first. The lock is a temperature interlock rather than a timer and it will not release until the cavity is genuinely cool, which on a large oven with the door shut can take a couple of hours. If it is cold to the touch and still locked, that is the latch motor or its switch — a common repair. Do not force it: that turns a latch job into a door job.

Should I stop using self-clean?

Not stop, but use it deliberately. A pyrolytic cycle takes the cavity far above cooking temperature for hours and it is the hardest thing an oven ever does to itself — latches, sensors and boards fail during or shortly after one more than at any other time. Do not run one the night before a dinner you are cooking, and let the oven cool on its own afterwards.

Why does a wall oven cost more than a range oven to repair?

Access, and only access. The parts are much the same. A range sits at floor level and the oven is reached through the front and the back with the appliance pulled out; a wall oven is a heavy appliance in a tall cabinet opening, wired rather than plugged, and it has to come out and go back trimmed and leveled. The repair is often quick and the appointment is not.
